I've been wanting to make sausage at home ever since I started watching Top Chef -- the judges seem to always ask the contestants "did you make your own sausage?" Must be a big deal, right? So I browsed around for recipes and it seems like sausage is basically one thing: meat and spices. That's it?!?! I can handle that! And since I just got home from working out, I might as well make it a lean recipe:
- 1 lb. ground venison
- 1 lb. ground turkey
- 1 tbsp. parsley
- 1 tbsp. oregano
- 1/4 tbsp. salt (I used about 1/2, it turned out a little salty)
- 3/4 tsp. black pepper
- 3/4 tsp. thyme
- 1/2 tsp. garlic powder
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves (I used more, but it was a little too much)
- Put all ingredients in a large bowl. Mix it well to make an even mixture.
- Form into patties, balls or just brown it like ground beef.
- If you freeze it, make sure to cook it well after thawing.
